The 4 White Devils
Eating right on the road isn’t always easy, especially when a truck stop is the only option for miles. But there’s one simple rule that can cut through the confusion fast: watch out for what fitness coach Paul Chek calls the “4 white devils” — sugar, salt, flour, and milk. In their processed, refined form, these four offer little to no real nutrition, and some even cost your body more energy to digest than they give back. Processed sugar suppresses your immune system and wrecks sleep quality. Table salt is stripped of the minerals your body actually needs, which is why a bag of chips is so hard to put down. Pasteurized milk loses many of the enzymes and nutrients it started with. And white flour spikes and crashes your blood sugar just like sugar does, leaving you reaching for more snacks an hour later. None of these are foods to fear completely — it’s the refined, processed versions doing the damage. The fix doesn’t require a total overhaul. Swap table salt for Celtic or Himalayan sea salt, reach for honey or maple syrup instead of refined sugar, and look for sprouted or 100% whole-grain options instead of white flour. At the truck stop, stock up on raw nuts, jerky, fruit, and popcorn brands like SkinnyPop or BoomChickaPop instead of anything wrapped in plastic.
